Apple Stuffing for goose or turkey


    1. 2 cups prunes
    2. 2/3 cup port or red wine
    3. 675g apples peeled , cored and cubed
    4. 1 large onion chopped
    5. 4 celery sticks chopped
    6. 1tbsp mixed herbs (sage,rosemary,thyme)
    7. Grated rind of 1 orange
    8. 450g pork sausage meat
    9. 1cup pecan nuts chopped
    10. 2 eggs
        1. A day before you plan to roast your turkey or goose soak the prunes in the port or red wine for a day , after chop them into four pieces and reserve the marinade.
        2. Mix the prunes with all the stuffing ingredients and season well , moisten with half of the reserved marinade.
